My wife and I have been married for 17 years. During that time, I have repeatedly tried to convince her that my 3x great-grandmothers cast iron pots and pans should be used as they just cook better food.
"OH, they're waaaay too heavy," she'd say, before ruining another t-fal non-stick pan.
Well, she's finally taken the plunge and I can only say we've won the battle. No more pork that died twice. No more limp, pale chicken. Sautéed vegetables are no longer bright and raw or brown and overcooked.
She was always a good cook. Now we eat like kings!

Congratulations on the cast iron victory. Sounds very win-win.
I dig cast iron. I received my mom's CI pans recently. I got/get a little emotional over it. One skillet is in pretty rough shape, but it looks like it will restore nicely.
Also, I started using a cast iron pie pan recently. It makes a crust remarkably better than any other pan material.
Also, also, I have a Texas shaped pan I use for cornbread and cobbler on occasion. It's my subtle way of letting guests know I'm better than them.

Stir the roux, sizzle the trinity (onions first), whisk in the stock, simmer the gumbo. One pot does it all.
Meanwhile, the old cast iron skillet lives on the stovetop and does the daily work. It's amazing how they never age or wear out.

I re-seasoned a small cast iron pan in the oven yesterday at 375* for an hour. I used butter instead of oil and it turned out fantastic.
